 Roasted Satay Chicken Recipe

 Roasted Satay Chicken Recipe Ingredients:
  • 1 lb Chicken Breast Strips
  • 1 tsp.(teaspoon) minced - Garlic
  • 1 tsp.(teaspoon) chopped - Cilantro
  • 1 tbsp.(tablespoon) Brown Sugar
  • 1 tsp.(teaspoon) Black Pepper
  • 2 tsps.(teaspoons) Salt
  • ½ cup Soy Sauce
  • 2 tsps.(teaspoons) finely chopped -  Ginger Root
  • 2 tbsps. (tablespoons) Lime Juice
  • 4 tbsps. (tablespoons) Peanut Oil
  • 1 tsp.(teaspoon) White Vinegar

 Roasted Satay Chicken Recipe Instructions & Tips:
  • mix together all the ingredients and marinate the chicken tenders for at least 1 hour.
     

  • Arrange the chicken pieces on a baking tray over parchment paper and pour about 2 ounce of water in the tray, so the parchment paper doesn't burn. If you are cooking in a convection oven you don't need to do that.
     

  • Roast for 10 minutes or until ready and serve on bamboo skewers with peanut sauce on the side. You can make a simple and easy peanut satay sauce by mixing over low heat some peanut butter with soy sauce and heavy cream, little sesame oil and white vinegar.
