 Roasted Pollo Alla Cacciatore Recipe

 Roasted Pollo Alla Cacciatore Recipe Ingredients:
  • 1  3 - 4 lb Chicken cut to 6 pieces
  • 3 tbsps. (tablespoons) Vegetable Oil
  • 1 Cup Flour
  • Season well with Salt and Pepper to taste
  • 2/3 Cup Red Wine
  • 1 Sliced - Onion
  • 1 Diced Red Pepper
  • 1 Sliced - Carrot
  • 1 Stalk - Celery
  • 2 Cloves - Minced Garlic
  • 1 Cup Crushed Tomatoes
  • Dried Italian Herbs


Time: 1 hour
Serves: 6

 Roasted Pollo Alla Cacciatore Recipe Instructions & Tips:

  • Season the chicken pieces with salt and pepper, dust in the flour and brown on both sides in oil in a large skillet.
     

  • Transfer chicken to a roasting pan. Remove most of the fat from the skillet and sauté the vegetables. Add the vegetables to the chicken. Deglaze the skillet with the red wine, add the crushed tomatoes and Bring to the boil.
     

  • Pour the sauce in the roasting pan with the rest of the food. Sprinkle with Italian herbs, cover and roast in the oven for 30 min., turning the chicken pieces at least once during that time.
