 Roasted Lemon Chicken with Peppers Recipe

 Roasted Lemon Chicken with Peppers Recipe Ingredients:
  • 3 ½ lb Broiler/fryer Chicken
  • ½ cup Olive Oil
  • ¾ tsp.(teaspoon) Salt
  • 2 large Red Peppers
  • 1 tbsp.(tablespoon) Dried Oregano
  • 1/3 cup Lemon Juice
  • 1/8 tsp.(teaspoon) Pepper
  • 2 large Green Peppers
  • 2 tbsps. (tablespoons) Chopped Italian Parsley


Time: 2 hours
Serves: 4 - 6

 Roasted Lemon Chicken with Peppers Recipe Instructions & Tips:

  • mix together all ingredients except chicken and vegetables. Add chicken and marinate at room temperature for 1 hour, turning once.
     

  • Drain and roast chicken at 400 degrees for 35 minutes. Cut peppers into ½-inch thick rings. Sauté 8 minutes. Spoon peppers around chicken.
