- 2 tbsps. (tablespoons) Slivered Almonds
- 2 tbsps. (tablespoons) Raisins
- 2 tbsps. (tablespoons) sliced - Black Olives
- 1 15oz can Tomato Sauce
- 1 Large Clove Garlic - minced
- 1 ½ tbsp.(tablespoon) Brown Sugar - packed
- ¼ cup Vinegar
- 1 tsp.(teaspoon) Paprika
- 1 tsp.(teaspoon) Vegetable Oil
- ½ tsp.(teaspoon) Salt
- ¼ tsp.(teaspoon) Liquid Smoke
- 1/8 tsp.(teaspoon) crushed Red Pepper - or to taste
- 1 Dozen Corn Tortillas
- 1 ½ cups Shredded Cheddar Cheese

| Roasted Chipotle Chicken Recipe Instructions & Tips:In medium bowl, mix together chicken, almonds, raisins and olives.
In another bowl blend tomato sauce, garlic, brown sugar, vinegar, paprika, oil, salt, liquid smoke and red pepper.
In a 1 ½ quart greased casserole, alternate layers of tortillas, chicken, sauce and cheese, finishing with cheese. Roast at 375°F. for 30 to 35 minutes.
