Low Fat Chicken with Herbs & Rice Recipe Ingredients:- 4 chicken Breast - skin removed
- 2 tbsps. (tablespoons) Oil
- 1 Fresh Onion - chopped
- 2 Garlic Cloves - chopped
- 100g Mushrooms - sliced
- 150ml Chicken Stock
- 150ml Dry Cider
- 2 tsps.(teaspoons) chopped Fresh Mixed Herbs
- Season well with Salt and Pepper
- 100g Long-Grain Rice
- pinch of Powdered Saffron

Low Fat Chicken with Herbs & Rice Recipe Instructions & Tips:Heat the oil in a non-stick frying pan. Fry the onion and garlic with the chicken portions until golden. Add the mushrooms, stock, cider, herbs and salt and pepper. Cover and simmer gently for 1 hour. Meanwhile cook the rice. Stir the saffron into the cooked rice. To serve, arrange the rice on a warmed serving dish, Place the chicken pieces and vegetables on top.
