 Chicken and Dumpling Recipe

 Chicken and Dumpling Recipe Ingredients:
  • 3 lb Chicken - cut up into 4 pieces & skinned
  • 2 ½ qt Water
  • 5 Carrots
  • 4 Celery  Stalks
  • 2 Small Onions
  • 1 Bay Leaf
  • 4 Juniper Berries
  • ¼ tsp.(teaspoon) Pepper Corns - whole
  • 2 tsps.(teaspoons) Basil
  • 1 tsp.(teaspoon) Salt

    Dumplings:
  • 1 ½ cups Flour
  • 3 tsps.(teaspoons) Baking Powder
  • 1 tsp.(teaspoon) Salt
  • 1/8 tsp.(teaspoon) White Pepper
  • ½ cup Parsley - chopped
  • 1 tbsp.(tablespoon) Chives - minced
  • 3 tbsps. (tablespoons) Margarine
  • 2/3 cup Milk - skimmed

1 hour

Serves:
2 - 4

 Chicken and Dumpling Recipe Instructions & Tips:
  • In a large Dutch oven, mix together water, chicken, 2 quartered carrots, 1 stalk celery quartered, 1 Fresh Onion peeled and quartered.
     

  • Add seasonings, bring to boil.
     

  • Reduce heat and simmer 45 minutes.
     

  • Remove vegetables and puree in food processor.
     

  • Add this to Dutch oven along with remaining vegetables, sliced thinly. Bring to boil.
     

  • mix together ingredients for dumplings.
     

  • Drop tbsps. (tablespoons) of batter into boiling broth.
     

  • Reduce heat to simmer.
     

  • Cover for 20 minutes and then remove bay leaf.

  • Ensure that all frozen Chicken has completely Defrosted before cooking
