Chicken and Dumpling Recipe Ingredients:- 3 lb Chicken - cut up into 4 pieces & skinned
- 2 ½ qt Water
- 5 Carrots
- 4 Celery Stalks
- 2 Small Onions
- 1 Bay Leaf
- 4 Juniper Berries
- ¼ tsp.(teaspoon) Pepper Corns - whole
- 2 tsps.(teaspoons) Basil
- 1 tsp.(teaspoon) Salt
Dumplings: - 1 ½ cups Flour
- 3 tsps.(teaspoons) Baking Powder
- 1 tsp.(teaspoon) Salt
- 1/8 tsp.(teaspoon) White Pepper
- ½ cup Parsley - chopped
- 1 tbsp.(tablespoon) Chives - minced
- 3 tbsps. (tablespoons) Margarine
- 2/3 cup Milk - skimmed
|  Time: 1 hour 30 min Serves: 2 - 4

Chicken and Dumpling Recipe Instructions & Tips:In a large Dutch oven, mix together water, chicken, 2 quartered carrots, 1 stalk celery quartered, 1 Fresh Onion peeled and quartered. Add seasonings, bring to boil. Reduce heat and simmer 45 minutes. Remove vegetables and puree in food processor. Add this to Dutch oven along with remaining vegetables, sliced thinly. Bring to boil. mix together ingredients for dumplings. Drop tbsps. (tablespoons) of batter into boiling broth. Reduce heat to simmer. Cover for 20 minutes and then remove bay leaf.
